One hour on Sunday, no meal deal till Friday

One tray of roast veg, one pot of pasta or bulgur, and five different dressings.

Cook one tray of roast vegetables and one pot of pasta or bulgur wheat on Sunday. Both keep well in the fridge for a few days, which is why they work better than rice here.

The five lunches

Monday: pasta, roast veg and pesto with some cheese crumbled on top. Tuesday: bulgur, roast veg, chickpeas and a lemon and olive oil dressing. Wednesday: pasta, tuna, sweetcorn and a spoon of mayonnaise. Thursday: bulgur, roast veg, feta and a few olives. Friday: whatever's left, with a tin of mixed beans and some salad cream.

Keep dressings in a small separate pot so nothing goes soggy by Wednesday. Add the tuna and the feta on the morning, not on Sunday.

Cool everything quickly after cooking and keep it in the fridge. If you want a hot lunch, take a bowl of leftover soup instead.
